I’m a bad sucker for Rhubarb and the easiest way to satisfy my craving for a Rhubarb dish is to make a sweet, vanilla compote.
Perhaps it’s Rhubarb in it’s simplest form but in my opinion it’s also the most versatile one. Of course, Pies & Muffins are great but With this compote you can make sooooo many different desserts and enjoy it in just some many more different ways.
I prefer to pair it with yogurt & cereal but it’s also great with rice pudding, ice cream, oatmeal or why not with chilled champagne/prosecco as a Rhubarb Bellini

P.S. Instead of sugar you could also use Stevia if you want the compote to be healthier because you will really need A LOT of sugar if you want it to be sweet. Furthermore I would recommend you to buy the red-red rhubarb (sometimes also called raspberry-rhubarb) if you want the compote to have the rhubarb typical deep red color. I simply bought the regular one and maybe peeled it to much – which means no red color left
